Cetara is one of those enchanting fishing villages on the Amalfi Coast. There are two theories on the origin of its name: one, from "cetarii" meaning fishermen or fishmongers; the other, from "cetarium", a plant that cures and stores fish....... whichever, the historical link to fish is clear. Fresh anchovies are preserved in barrels layered with water and sea salt. The process is quick and simple. The anchovies are soft, moist, and plump. Before being used, they must be washed thoroughly in cold water. Salted anchovies are used extensively in cooking, bestowing their distinctive pungent flavor to sauces, stuffing and pizza toppings.
